Mint Noodles & Paneer Sauce

A quick and easy recipe for noodles with dense flavor of mint. It goes well with thick cottage cheese mint sauce. Most of the ingredients used in this recipe are pantry staples, which means you can make it whenever you need a comforting noodle dish that comes with a bite.

INGREDIENTS

(1 Cup=250ml)

For Mint Noodles

  • 1 tbsp Olive oil
  • 2 cups Noodles; Boiled
  • 2 tbsp fresh Mint leaves; finely chopped
  • Salt to taste
  • 1 tsp Black pepper Powder
  • 1 tsp Red Chili flakes
  • 1 tbsp Garlic Powder

 

For Sauce

  • 2 tbsp Olive Oil
  • 1 ½ Cup diced Cottage Cheese (Paneer)
  • 3 tbsp Soy sauce
  • 1 tsp Sesame seeds
  • 1 tsp Parsley flakes
  • 1 Medium Onion; Sliced
  • 2-3 Green chilies; Chopped
  • 5-6 Garlic cloves; Minced
  • 2 tsp fresh Ginger paste
  • 1 tbsp Tomato ketchup
  • Salt to taste
  • 1 tbsp Corn flour
  • 3 Cups Water
  • 1 tbsp Fresh Mint leaves ; finely chopped

 

PROCEDURE

For Mint Noodles

  • Heat oil in a pan; add mint leaves and sauté for a minute.
  • Add boiled noodles and salt. Stir fry for 2-3 minutes.
  • Season with Black pepper powder, Red chili flakes and Garlic powder. Mix well and keep aside.

 

For Sauce

  • Heat oil in a pan. Add Onion, Green chili, Mint leaves, Ginger, Garlic and Salt. Sauté for 5 minutes. Don’t overcook.
  • Cook Paneer cubes in Air fryer for 5 minutes or shallow fry till it turns golden brown.
  • Dissolve corn flour in water, then add it to the sauce. Cover cook for 5 minutes.
  • Add Soy sauce and tomato ketchup. Cook for a minute.
  • Add Paneer in the sauce and cook it for 2 minutes.
  • Garnish with pan roasted sesame seeds and parsley flakes.
  • Serve hot with mint noodles.
