Spinach Sauce Pasta

This is a simple recipe for pasta with creamy Spinach sauce and lots of cheese, served with veggie cheese balls. It is great for Cheese lovers and Vegetarians.

 

INGREDIENTS

For Veggie Cheese balls

  • ½ Cup shredded cabbage
  • ½ Cup shredded Carrot
  • 3-4 chopped Spring Onions
  • 1-2 Finely chopped Green Chilies
  • 1 tsp Black Pepper Powder
  • ½ Cup Cheddar cheese; Shredded
  • Salt to taste
  • 2 tbsp All purpose flour (Maida)
  • ½ Cup Egg wash
  • ½ Cup breadcrumbs
  • Oil (for frying)

 

For Spinach Sauce

  • 1 Cup whole Wheat/Multi Grain Pasta (Of your Choice)
  • 2 tbsp Olive Oil
  • 4-5 Garlic Cloves; Chopped
  • 2 cups chopped fresh spinach leaves
  • ½ Cup Reduced fat cream cheese
  • 2 tbsp Mild Cheddar Cheese; Shredded
  • Salt to taste
  • ½ tsp Black Pepper Powder
  • ½ tsp Chili flakes
  • 3 tbsp Grated Parmesan

 

PROCEDURE

For Veggie Cheese balls

  • Mix Cabbage, Carrot, and Spring Onions in a bowl. Let it rest for 5 minutes. Discard the juice released by veggies.
  • Now add Salt, Green chilies, Pepper and all purpose flour.
  • Divide the mixture into 8 parts. Make small disc of each part, place 1 tsp cheddar cheese in center. Shape them into balls.
  • Brush each ball with Egg wash, coat with breadcrumbs and deep fry veggie cheese balls at low heat.

 

For Spinach Sauce

  • Bring a large pot of salted water to boil. Add Pasta and cook until it is tender.
  • Boil spinach leaves and drain excess water.
  • Blend spinach leaves with cream cheese, 1 tsp salt and cheddar cheese until the mixture becomes smooth and creamy.
  • Heat 1 tbsp oil in a pan, add Garlic cloves. Saute for a minute, then add Spinach-Cream paste. Cover cook for 2 minutes.
  • Drain pasta and pour 1 tbsp olive oil on it. Add salt, chili flakes & Pepper powder. Toss to coat pasta with spices.
  • Pour spinach paste over the spiced pasta. Sprinkle Parmesan and serve with veggie cheese balls.
